As suggested by L2o's wine director Chantelle Pabros (update: she recently left to seek other ventures). On another note: Ms. Pabros was very well dressed (if rumours are true, donning her own custom made and designed outfits friendly to her line of work). Call me impressed.
On it's own, the sake is rich, full of strong umami/mushroom flavours, and aroma. However, when paired with most of our dishes, our group agreed unanimously that it was too heavy, overpowering much of the seafoods' delicate flavours.
