85% ground. kosher salt, pepper, cumin, hungarian paprika, ground cloves, molasses, chopped garlic, bread crumbs, grated pecorino. smoked on the trager grill at 180F for 15 mins on each side. severed on a lightly toasted and tuffle-butter glazed potato roll with aged vermont cheddar, butter lettuce and tomato slice.
