改版腌笃鲜:真正的上海版呢,是要在清明时节,用新鲜的笋尖和咸肉,火腿,蹄膀炖成.因为是冬天,本厨用冬笋,腐竹,冬菇替代.找不到咸肉,就只用了金华火腿,要先煮一下,去掉咸味,再下进砂锅 -- 我心爱的砂锅呀!两个小时后就可以喝啦!鲜哪!
