Torta Mimosa

Torta Mimosa (mimosa cake) is the dessert of choice to celebrate Festa della Donna (Women's Day) in Italy. The cake consists of 2 or 3 layers of yellow sponge cake with custard cream filling in between. After covering the cake with frosting, it is topped with tiny cubed yellow cake and dusted with powdered sugar. The results are supposed to resemble the mimosa (silver wattle) flower.
