Heirloom Tomatoes, Peaches, Goat Cheese, and Walnuts

An amazing salad. Tomatoes and peaches came from the Nashville Farmer's Market, and were truly perfect. Goat cheese is chevre, and I substituted walnuts for the pecans from the original recipe (reprinted below). I also subbed regular balsamic vinegar and red wine vinegar for the white balsamic.

Heirloom Tomatoes with Peach, Goat Cheese, and Pecans

Serves 6. From Southern Living.

 

ingredients:

1/3 cup white balsamic vinegar

1 garlic clove, minced

2 Tbsp brown sugar

2 Tbsp olive oil

1/8 tsp salt

1 large peach, peeled and diced

2 Tbsp chopped fresh basil

2 lbs heirloom tomatoes, sliced

3 oz goat cheese

1/2 cup chopped pecans, toasted

 

directions:

Whisk together white balsamic, garlic, brown sugar, olive oil and salt. Stir in peach and basil. Spoon over sliced heirloom tomaotes; top with crumbled goat cheese and toasted pecans. Sprinkle with freshly ground pepper to taste.
