Spicy Leafy Fried Rice
Made from left over boiled rice ,little minced meat,garlic ,diced veges ,spring
onions ,little ginger and diced fresh coriander and parsley leaves ,some seasoning ,sprinkle of peri-peri /chilli or powder .Sometimes I mixed this with half a tsp garam masala to have different hint of flavour .My kids doesn't like this though,I only do this for myself and if hubs is around .I love coriander .It simply reminds me of our visit in the mountains of northern Thailand for nearly a month.Best I could remember in terms of food was typical spicy noodle soup mixed with coriander and this was on daily basis.There wasn't many choices of food around as we were staying with the Hmong .Coriander has unique pleasant taste ,but hardly could stand with it daily ( at that time ) .It was a shock to my system but then I learn to love it and now as added ingredient in my cooking .I'm not cooking with coriander everyday but I like my food with variations from time to time and some dish with coriander comes in .Cooking western food then to asian dishes is typical in my kitchen.
* I prefer fresh raw coriander that being cooked.
Cooking destroys useful enzymes .Even with Spinach I prefer having it in raw state as a salad .But forget all the nutrients you'll get if you're eating genetically altered veges .
Don't even think your 5 veges and fruits a day pushes the doctor away --- you'll probably be seeing your lovely doctor often in few yrs time if you're predisposed to weird tumours and cancers or getting obesed ,you'll wonder you're getting too fat hmmm ,couch potato ,tv - computer games addicts or too lazy to move around oh dear .It's good to know what we are eating ,avoid we as we can GMs /GMO's on our plates.
