The Thirty Dollar Project - Day Seven
This is the last day of the project and I started off with the bowl of oatmeal. I didn't finish the eggs. The family left me about four eggs. If I had another day to cook, I might cook a little egg & tofu soup or an egg fried rice. Unfortunately, I didn't have the time to prepare all of this. I barely prepared my dinners for this project from scratch.
My lunch today was leftover enchilada casserole with a side of roasted vegetables. Tonight, my dinner was a lighter meal but satisfying. The ingredients for dinner were similar to my lunch but for dinner I used herbs/spices such as cilantro, cumin, and chili to change the flavor. I took the corn tortillas and made chips. The remaining vegetables were roasted. Both the chips and vegetables were used to dip. And... I have enough left over for lunch tomorrow.
I must say that my family and I have eaten well over the past week. They enjoyed dinners cooked from scratch... something that I wish I could do everyday. I've learned that I would need more time to eat like this and so in reality, I normally pay a little more for food so that I can prepare meals in a faster time.
I've concluded that if one knows how to put together healthy meals and knows how to shop for the cheaper foods, then it is possible to eat $30/person/week. My biggest challenge though, was to get enough calcium everyday. I took a calcium supplement to fill the gap but that is not normally included in a $30/week budget.So if I did this a second week, I would have to work harder to increase my calcium intake.
