The Thirty Dollar Project - Day Four
Over the hump day and my family and I are still mixing the ingredients to make tasty meals.
Oatmeal and soymilk do make a hearty breakfast that holds till lunch time.
Leftover fried rice filled me pretty good for lunch. I also ate my usual Peanut M&Ms... I became a little hungry before I got home to prepare dinner.
For dinner, I decided to make tortilla soup. Usually, chicken makes a good protein for this soup but I am out of chicken. So, I used the tofu instead. I also added frozen corn from my freezer and it was not on the original group of foods I purchased with the thirty dollars. But again, I'm feeding the family in the evenings and if I make it to day seven, I will need to add a few things to these meals so that everyone can eat.This recipe gave me the opportunity to use a lot of tortillas. I stacked 12 of them, thinly sliced them, placed them on pan and dried them in the oven. I'm running low on bell peppers and onions so I may have to get a few more to make my ends meet. The soup was awesome tasting. Seconds were in order and there is enough left for lunches tomorrow.
This day was my most expensive day... $3.05, which is still pretty reasonable. And since this is a photography site, it might be worth mentioning that I had a hard time trying to capture this without washing out the color and detail. I am still not pleased with it but it will have to do. I'm going to sleep now but looking forward to day five.
