The Thirty Dollars Project - Day Two

Today, I did not forget my breakfast and I decided to photograph each meal so you can see what I ate.

 

I started the day with breakfast: 2 eggs, cheese and broccoli and it was a little more than what I normally eat. My breakfasts are often very light but I went ahead and ate it. It was tasty and it took me only 5 minutes to prepare it. I wrapped it up and took it to work with me and ate about 8:30.

 

My lunch was supposed to be Corn tortillas with beans, rice & cheese. I forgot the cheese and had only the beans and rice. When I was assembling my lunch, one of our wonderful cooks came and asked me if I wanted any noodles with chicken and veggies. I said no thank you and explained what I was doing. She just looked at me, grabbed a plate and scooped some of the noodles on a plate. Then she asked, "is this enough?" I said yes and thanked her. And that's how I ended up with a little more food than I planned. By the time I ate the tacos and noodles, I was full. I wanted to eat my little cutie mandarin but I was satisfied. I didn't calculate the noodles in my overall cost because I didn't pay for it. It was a delicious gift.

 

Peanut M&Ms are not my only vice. The other vice is potato chips. My grandson, who is not following the Thirty Dollars Project, found the bag of BBQ chips and wanted to share with me. I resisted for about 10 seconds and ate about 2 servings. I felt guilty for about 10 seconds, added it to my total caloric intake and vowed not to do that again.

 

Dinner included roasted sweet potatoes with the garlic pepper and thyme. I lightly sprayed the cubes with canola spray and roasted them. It took about 20 minutes. The brown rice is seasoned with the garlic pepper, parsley, onion powder and something called, Liquid Aminos. It tastes like soy sauce but contains only 320 mg sodium per teaspoon which is about the same as low sodium soy sauce. I added a teaspoon to the rice to add flavor.This gave me about an extra 100 mg sodium. The rice took 45 minutes to cook. I also made Lemon Pepper Chicken seasoned with garlic pepper and lemon zest (grated lemon peel). It was pretty tasty. My whole family ate. I have a little less than half sweet potato left, about a third of the chicken left and about 2/3 rice left for additional meals.

 

I must confess, cooking, calculating and keeping track of all of this, in addition to my normal workload has been a lot of work but I'm still trying to hang in there and do this everyday for the full 7 days. Another challenge... although I shopped as though I would be the only one eating, I am not. My family ate 3 of my cuties and five of my bananas. So, I'm short on fruit. I am also short on calcium because I didn't drink any milk today. I took a calcium supplement to make sure I got enough calcium.

 

That's it for Day Two. I know John is out shopping, calculating and planning too. I'm looking forward to see what he's purchased.
