The Thirty Dollars Project - Day One

My day starts about 5:30 am and it is too early for me to eat. I usually take my breakfast to work but I forgot it. So, I started off on the wrong foot. Fortunately and sometimes unfortunately, I work around food. So I started off with a cup of decaf coffee with a little bit of 1% milk, one handful of almonds and a salad. I don’t do caffeine hence the decaf coffee. Caffeine temporarily raises the blood pressure and I don’t want anything increasing it if I can avoid it. The almonds were to keep me from passing out since I had a presentation and the salad was part of my presentation. The salad included baby leaf spinach, sliced persimmon, blue berries, dried cranberries with a blend of orange juice/rice vinegar with no seasoning/olive oil for the dressing.

 

My planned breakfast would have been 1 cup oatmeal with 8 oz. soy milk, and a banana but I blew it. I decided to calculate my intake just as though I actually ate the breakfast and I will deduct it from my total servings to see if I run out of anything.

 

My lunch looks like this: Broccoli, beans & brown rice and six peanut M&Ms to avoid the afternoon slump. I had a couple cups of water and I had some blueberry tea. I forgot that I am not supposed to be drinking tea. I do have a lemon tree so I’m thinking that I will add a little lemon water for variety.

 

For supper, I gave my family the lentil barley soup that absorbed all of the liquid so it was more like a stew. I should've added a little more water. I must confess, I seasoned it with cumin, coriander and 1 tsp of chicken seasoning. None of these were on my shopping list. But I decided to splurge a little since I have to feed others on my $30/week. Anyway, I also added onions, carrots, tomato, bell pepper and Kale. It was my first time making this combination and it tasted pretty good. I served it with hot corn tortillas filled with melted cheese. By the way, this lentil barley soup made about 10-12 cups of soup, which is 10-12 servings.

 

As a side note, my sodium is not accurate since I added chicken seasoning to the barley lentil soup. I also added vegetable seasoning to the beans. If I could guess, I would have consumed an additional 500 – 700 mg sodium… totaling about 974 mg for the day.

 

That’s it for my first day. I will make sure that I take my breakfast & lunch with me but I'm finding it hard to stick with the project with so many variables. I'm determined though to stay with it as best as I can.
