Maine Lobster -- Homarus americanus

American lobsters are a popular food. They are commonly boiled or steamed; for either method, keeping them alive until they are cooked can help avoid food poisoning, but frozen and refrigeration storage methods are also very common, and safe. Hardshells (lobsters that are several months past their last molt) can survive out of water for up to two days if kept refrigerated.
