This recipe which I found in an Audible book called Always Hungry by David Ludwid was absolutely delicious. Great way to avoid the extra starches from the usual potatoes. Truth is this tastes almost no different at all.
Shepherd's Pie with Cauliflower (and whitebean)Topping
This recipe was a huge hit with our pilot participants. The dish’s cauliflower and white bean topping is arguably richer and tastier than the traditional potato topping.
Place the cauliflower in a pot and add water just to cover. Bring to a boil over high heat, reduce the heat to medium, and cook until tender, about 10 minutes.
Drain the cauliflower, return it to the pot, and add the remaining
2 tablespoons oil, ¾ teaspoon salt, ¼ teaspoon pepper, and the white beans. Puree with an immersion blender until smooth.
