Ramen from Ganso Ebisu Ramen @ Senzoku (near Asakusa)

700 yen

Overall 7.0/10

Lunch. Previously I ate this ramen more than ten years ago. In Tokyo, there is so much ramen shops, and I love ramen so, I want to try to eat various ramens, so sometimes I prone not to re-visit the shop I ate previously. This ramen shop serves traditional and typical tokyo style ramen. Broth is mainly made from fish and vegitable with soy sauce. And broth is light taste, not like tonkotsu ramen. When I was chiledhood, majority of ramens were such style. But after ramen boom about 15 years ago, many ramen shops started business and ramen chef also makes various ramen. Certain ramen chefs may cook creative ramen by fusing other cuisine to ramen (from chinese and italian). Certain ramen chefs may cook ramens inspired from Japanese local area (ex, wakayama, kumamoto). certain ramen chefs may add sweats into the menu for gain more profits from women (ex. koumen). But this ramen shop have not been changed tastes and ambience from previous visits (Only change is price. I think price is risen 100 yen (1 USD) from 10 years ago). I felt relief and strong mind of the chef from this ramen shop.

Price (700 yen) is fair as ramen, tastes of bunch of bamboo shots is great. Much roast pork made me happy. Delicate soup taste made my sence sharpen and somehow made me calm at the same time.
