Mushroom-free stuffing

For Max-o, who inexplicably does not like mushrooms. (??)

 

Our stuffing: Sauté bell peppers, onions, and if you like mushrooms, tons of mushrooms together. While they're softening, sauté orzo in canola oil unitl it starts to brown. Once that happens, toss in the pepper mix with the orzo and cover it with water. Bring it to a boil, then bring down to simmer until all the water is gone; test it, and add more water if needed to soften the orzo.
