I've just never seen so many varieties up close. Fish prepared like this is wonderful in fried rice and stir fries - it adds body and dimension to a dish like no other. No, not the whole fish, but sliced or diced - and a heck better than table salt! These stalls added the balance to the smell of the market. You have that strange, sharp smell that is raw meat, and then the musky wetness of fresh seafood. The dried fish was the body of all the smells.
