Traditional Easter Simnel Cake.

A wonderful excuse for some spring floral cake decoration and to break out the antique hand-embroidered (and hand-made) table linen. Easter falls quite late this year and, together with a sudden hot spell, many of the early spring flowers have already finished. It does mean some of the later flowers are going strong — the apple blossom is particularly fine and lends a lovely subtle dusky pink freshness
