Pisto Manchego

Or, "Vegetables Caught in the Headlights." Dang, that's some bright flash action.

 

Anyway. Pisto Manchego is a classic veggie dish from La Mancha and one of my favorite Spanish dishes so far. I make it pretty often. It doesn't usually contain garbanzos, but they give it a more robust, stick-to-the-ribs quality that I like.

 

On the side: seedy whole-grain bread and two cheeses--one English, one French. And wine, but I forgot to pour it before I took the picture.
