Brisket cutter

i bought the knife to modify ,,by cutting the end off & adding a 10 mm piece of curved stainless steel , it will guide the knife & the top will stop the stomach getting cut,usually the internals are removed before the brisket & neck is cut ,I CANNOT UNDERSTAND WHY YOU WOULD WANT TO CUT THE BRISKET BEFORE GETTING THE STOMACH & INTERNALS OUT OF THE WAY FIRST, The knife It polished up well,,,It's a shame, that you use a hammer to hit it through the brisket & neck,,, I have confidence it will survive , it's good steel,,,
