Vegetarian Caesar Salad

From the Rebar Modern Food Cookbook by Audrey Alsterberg and Wanda Urbanowicz.

 

Vegetarian Caesar Dressing

 

Ingredients:

1 bulb roasted garlic

juice of 1 lemon

1 tbsp capers

1 tbsp caper juice

1 1/2 tsp dijon mustard

2 garlic cloves, minced

1/4 tsp salt

1/4 tsp cracked pepper

1/3 cup grated parmesan cheese

1 cup olive oil (you may not need this much)

 

Directions:

Combine all the ingredients except the oil in a blender or food processor and blend. Add olive oil in a slow, thin stream. Correct seasoning to taste.

 

Garlic Croutons

 

Ingredients:

5 slices bread, cubed

3 tbsp olive oil

3 garlic cloves, minced

1/4 tsp salt

 

Directions:

Toss bread cubes with oil, garlic, and salt. Spread out on a baking sheet and bake at 350 for 8-10 minutes, or until slightly browned and crispy.

 

Vegetarian Caesar Salad

 

Ingredients:

Vegetarian Caesar dressing (see above)

Romaine lettuce

Quorn chik'n tenders (optional)

2 garlic cloves, minced (optional)

garlic croutons (see above)

extra parmesan for garnish

 

Directions:

Sautee the Quorn chik'n tenders with the garlic in a little olive oil. Top the romaine with the Quorn chik'n tenders, croutons, shredded parmesan, and dressing.
