Vegan peanut butter cups
this is not my recipe! I overfilled them but they still look kind of cool. I will type the recipe later it is not in word format i have to type it out. Preview: basically it's just dates, peanut butter, cocoa powder, coconut oil and some coconut sugar
OK here is the recipe:
- 1/2 cup melted coconut oil
- 1/2 cup cocoa powder
- (optional): sweetener of your choice - I used about 3/4 Tablespoon coconut sugar - because i want to share them with the person who gave me the recipe and she is refined-sugar-free. You can use any vegan sugar I am sure.
- 1/2 cup peanut butter - either salted or not- If not using salted you can add a bit of sea salt (I used salted peanut butter)
- 4 dates - soaked in warm water for about 2-4 minutes
1. Mix melted coconut oil, sugar and cocoa powder (I used a double boiler and added the sugar first, tried to get it to dissolve a bit then mixed in the cocoa powder)
2. Pour a bit into candy wrappers until the bottom is lined with a thin layer of chocolate. Put in the freezer to set
3. Mix peanut butter (if unsalted you can add a pinch of salt) and soaked dates and mash together (I used a potato masher. If you really want to be thorough, put the dates in a food processor and pulp them before adding to the peanut butter)
4. Scoop balls of the date/peanut butter mixture into the cups on top of the thin layer of hardened chocolate - put as much or as little as you want - if you want a smooth top then don't overfill
5. pour remaining melted chocolate mixture over the peanut butter/date balls and fill the cups. Put in the freezer to set.
NOTE: I found I had a lot of peanut butter/date mixture left over so I think maybe you need to double the chocolate/coconut oil mixture, however I used larger cups than my friend did maybe that had something to do with it?
