The Bakery inside a Fortress
A baker beckons for a young woman to bring her shallow pastry-laden tray into the cellar-like medieval bakery while his daughter looks on,occasionally rearranging the trays upon the floor, keeping track of which order belongs to which customer. The fire tender stokes the fire just out of sight and does the actual baking in the ancient clay and stone oven built in the 1600s. The trio stay busy all day accepting and baking the large trays of pasties and cakes carried in upon the heads of local women. They must all be finished and cooled upon the wall racks in time to be collected for the evening meal of "break-fast" during the sunrise to sunset fasting required of the month of Ramadan. This place and tradition are unique and fascinating to watch.
