Bacalao(Salted codfish) cheek meat, covered wit gelatinous bacalao jaw, served with an acacia honey emulsion.

 

The fish meet was not too salty, which is the experience i usually get when eating bacalao, it was silky smooth. One of the best things Ive ever eaten
