Pancakes

130g all-purpose flour

2 teaspoons baking powder

2 tablespoons sugar

1 egg

170ml milk

2 tablespoons melted butter

 

Sift the flour and baking powder into a bowl. Add the sugar and stir. Combine egg and milk and whisk until smooth. Blend in melted butter. Cook on a hot, greased non-stick pan, using about 2 or 3 tablespoons of batter for each pancake. Cook until brown on one side and around edge; turn and brown the other side.

 

Serves 2.
