puff pastry apple tartlet

end up making puff pastry apple tartlets for the thanksgiving dessert. it's quite a challenge to make a health concious dessert with minimal sugar (dad just became diabetic). after tasting couple types of apples at the market, i finally decided to use a mix of pink lady (crisp, tart, and candy-like) and fuji (firm and sweet).

 

my final version for this thanksgiving dessert was using a teaspoon of honey as glaze in place of apricot jam. each tartlet was served with a small dollop of lemon mascarpone cheese.
