Drying Cod, Salvage
Even though there has been a moratorium on commercial cod fishing here since 1992, every year there are a couple of weeks of a recreational food fishery when residents can fish for cod for their own consumption. The fish pictured here are are relatively small; I've seen (and caught) large cod over 45 lbs.
These fish have been salted and are drying. This is an ancient preservation method and many people dry their fish laying flat on screens. Salt fish is very tasty and my favorite meal with it is fish cakes. The cod is well soaked and rinsed several times before cooking, removing all of the salt.
