Exacting Process Control

When I first visited Vivace, David Schomer had instrumented the coffee grinders with regularly calibrated thermocouples to track temperature to he could evaluate its impact on the finished product. Dates show regular checking of equipment and presumably application of lessons learned in the earlier experiment.

 

I really admire Schomer's obsession with process improvement, but I can also believe it's more fun on my side of the counter.
