This little piggy went to market....

Now there's something that's never going to end in anything but bad news for pigs in Mexico where, like Spain, they don't waste any part of the little pink chappies to eat, even from their heads right down to the trotters.

 

At the main Mazatlan market you can find scores of butcher stalls displaying them hanging on hooks, alongside tray after tray of bits of other animals, all of which seem to feature orifices - and with everyone buying these orifices with great gusto despite it looking more squeamish than culinary delight.

 

Particularly off-putting was the counter featuring a large display of animal backsides. The best that can be said for this delicacy is that they are well washed and it is quite entertaining to see how they picks them up. Yes, just insert a finger and lift - "I’ve got a nice pig’s arse for your tea tonight, dear."

 

It’s almost enough to make you turn vegetarian...and I can’t see this dish catching on in Scotland, despite our loving for haggis and the famous Mike Myers quote of "All Scottish cuisine is based on a dare."
