Chunky gazpacho topped with honey sesame sticks, with Naan bread and breaded mozzarella. #summerfood

I've never had gazpacho I didn't make, so I've just made it the way I like it. And the few who've tried it have liked it, too.

But, this veers way off of any recipe I've ever seen, so purists may argue it's not even "real" gazpacho?

Either way, it's great for a hot summer day.

 

The following yields about 6 cups, so I usually double it so there's leftovers.

 

First I chop the following - big chunks are fine - and blend it in a blender until liquid...

... 3 green bell peppers

... 3 red bell peppers

... 1/8 large red onion

... 3lbs tomatoes

... 1-2 cloves garlic

 

Then, I chop the following into bite-sized chunks...

... 1/8 large red onion

... 1 red pepper

... 1 green pepper

... 2 stalks celery

... Half a cucumber

 

I then stir it all together in a large bowl and season with xvo, red wine vinegar, salt, pepper, basil, maybe oregano. (I like to sprinkle crushed red peppers on mine.)

 

And, of course, I chill it thoroughly (4ish hours) before serving with the stuff you see in the pic.
