Corn Cob Jelly
I never posted here when I made this corn cob jelly. It was after we got 5 dozen ears for freezing and I had cobs coming out of my ears. I had never had the jelly before, but I figured it was worth a shot.
It's surprisingly good! As I cooked the cobs, the smell of corn dissipated and I really wasn't sure what it was going to taste like. It's very mild and sweet and, I think Vera hit the nail on the head- floral. You'd never know it was made from corn.
I've eaten it on cornbread, soda bread, cream scones, and toast. Delightful. I read somewhere that it's great with fried green tomatoes, but I've yet to try that. I rarely use pectin so was pleased with the delicate set this has- silky and smooth.
