Calamari con Fave e Insalata Panzanella, 2

Grilled calamari, fava mint puree, heirloom tomato and chantrelle panzanella

 

Tender calamari, though the portion is on the small side. The mint puree made it refreshing, the tomatoes added acidic sweetness and the fava beans sprinkled within the vegetal mound added a bit of earthiness.
