Baingan ka bharta ~ Mashed eggplant Indian Style

Eggplants made this way taste great but the dish is not very photogenic. I tried this set up this time and it worked for me - style wise! I would like to know what you think. How would you take pictures of a dish of this kind? Any photography tips are most welcome.
