Veggie enchilada dinner

...veggie enchiladas, Mexican rice, and refried beans.

 

The enchiladas are filled with a blend of sautéed vegetables (mushrooms, zucchini, orange bell pepper, and green onion) and melty Chihuahua cheese. I made the enchilada sauce from scratch using this recipe. The rice is Basmati cooked with half a can of El Pato salsa, and the refried beans are store-bought. The plate is garnished with drizzles of Mexican sour cream.

 

I also served chips, salsa, and homemade guacamole.
