Slice
A slice of my final cake for my cake decorating class at Michael's. The taste is definitely better than the decorations, but I don't mind. Shortly after I ate this, Alicia brought over these amazing cupcakes, and we went to the midnight showing of The Dark Knight, which was awesome!
lemony-cake Recipe:
1 cup butter, softened
2 cups granulated sugar
4 eggs
1-1/2 cups self-rising flour
1-1/2 cups all-purpose flour
1 cup milk
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
In a small bowl, sift together flours. In a separate bowl, combine the milk and extracts.
In a large bowl, cream butter until smooth. Gradually add sugar and beat until light. Add eggs one at a time, beating well before adding the next. Mix in flour in three parts, alternating and ending with the milk mixture.
Pour into two greased and floured 9-inch cake pans. Bake at 350 degrees for 30 minutes, or until a toothpick comes out clean.
Run a knife around the perimeter of the pans and let cool for 10 minutes before turning out onto racks to cool completely.
I just used a can of lemon cream pie filling between the layers. It's frosted with Wilton Buttercream.
