Copperleaf Restaurant : Entree : Oregon Beef Steak

Made from pasture raised cattle in Wheeler County, Oregon. All natural, organic beef supplied by Painted Hills Premium Beef, Inc., a Ranchers' Co-op.

 

Two cut choices:

14oz NY Strip Steak

10oz. Filet Mignon.

 

28 day dry-aged and grilled to requested temperature then served with the following accompaniments :

a) A stick of caramelized Onion-Brioche Toast, made like a savory Bread Pudding, topped with a quinelle of Artichoke Mustard where the Artichoke is made in Barigoule.

b) Braised Tuscan Black Kale (Cavelo Nero)

c) Glazed Artichoke piece made in Barigoule then sauteed in clarified butter

d) Stewed Cranberries (stewed in Cranberry and Orange juices, Sugar, Autumn Spices (Cinnamon, Anise, Clove, Nutmeg) and Vanilla.
