India, Dessert, Orange Kulfi, prepared with candied Orange peel, Orange Segments Salad, Chocolate Leaf & Pomegranate Kernels.
Kulfi or Khulfi, is a popular, traditional Indian Subcontinent frozen dairy dessert, a special kind of ice cream, that combines exotic ingredients to delicate flavours. Kulfi traces its heredity to the sherbets & ices of the Arab & Mediterranean worlds, since its introduction by the Mogul empire in the 16. Century it has not changed much, according to the Indian food historian Julie Sahni
Kulfi does not contain egg yolks & it’s based on thickened milk, its tasty caramelized flavours & smooth, toffee-like texture is almost like savouring a candies richness & makes Kulfi even more of a treat. Compered to western ice creams, Kulfi is not whipped, it’s usually frozen in a cone shape like mould; resulting in a solid frozen dessert similar to custard based ice cream. Due to its compactness, Kulfi takes a longer time to melt than western traditional ice cream. Kulfi is also popular throughout, the Middle East, Nepal, Myanmar, Pakistan & Bangladesh.
