Shimeji On Toast

First bake the hell out of the Shimeji (with salt and vetsin) in some oil. Take out of the pan, whipe pan clean, add butter, slowly saute some garlic. Add the baked mushrooms, heat through, splash of soy sauce,splash of shaoxing rice wine, fresh spring onion, cilantro, peper. Serve on toast, add 62°C egg yolk. Sprinkle with parmesan. Sounds like there is too much going on, but it didn't taste like there was too much going on. I liked it big time!
