Cellars at Jasper Hill's Harbison with Iggy's Baguette

Harbison is a scrumptious, pasteurized cow milk cheese made by the team at the Cellars at Jasper Hill. It is aged 3-6 weeks. In the style of Vacherin Mont d'Or, it is bark-wrapped with bark sourced from Jasper Hill's own woodlands. It is creamy, spreadable and unctuous with a slightly piney/sprucey flavor (from the bark). Perfect for cool fall weather.

 

As for the name? The cheese is named after Anne Harbison, viewed by many as the grandmother of Greensboro, VT -- she has known the Kehler brothers, the founders of the Cellars at Jasper Hill, since they were children.
