Oven Roasted Okra

“And what did you learn today?” I asked Jersey Shore Fightin’ Texas Aggie Ring (The ring who shall rule them all).

 

“Well Sir…” said Aggie Ring. “I learnt that okra is a fruit like a tomato or an avocado. Also, when it’s roasted, all the slimy stuff goes away.”

 

We had procured a bag of fresh okra at the grocery store several days ago and it needed to be used. I didn’t have the makings for any gumbo, plus I was hungry. I have always liked okra any way it’s prepared. I had read about people roasting it so Aggie Ring and I decided to see how that worked.

 

Aggie Ring and I don’t need no stinkin’ recipes so we just cut it up to similar size chunks, threw it in a mixing bowl with some olive oil and sprinkled it liberally with black pepper, onion powder, garlic powder, and cajun seasoning. After a quick stir to coat everything, we threw the okras on a sheet cake pan and threw them in a 450 degree oven to roast away.

 

The finished okra was incredible. It was crispy and crunchy and all of the spices complemented it. We’d definitely do this again. Perhaps we might even chop up some onions and tomatoes and throw them in to roast as well.
