For today’s charcuterie course before the main meal, Jersey Shore Fightin’ Texas Aggie Ring choose some locally raised, uncured maple sugar smoked bacon which he had the butcher custom slice to approximately 1/4-inch of thickness. Then Aggie Ring made a glaze of honey, sriracha, crushed red pepper, and black pepper and, using a pastry brush, put that delicious glaze all over that bacon.

 

Aggie Ring then proceeded to “Roast the Hell!” out of that bacon until the fat had rendered and it was nice and crisp. Once that thick-cut, delicious maple sugar smoked bacon had cooled down slightly, Aggie Ring gently dusted it with some fresh crumbled goat cheese. Aggie Ring chose the goat cheese because it has a very mild flavour, it’s very soft, and doesn’t clash with the symphony of flavour presented by the bacon.

 

Of course, this large quantity of delicious thick-cut maple sugar smoked uncured bacon was an embarrassment of riches for both myself and the Texas Aggie Ring. We enjoyed a few pieces and I told the Aggie Ring, “Well, no point in saving bacon in the refrigerator. Our squirrels are going to eat well tomorrow.”
