Simple Sugar Cookies

After a busy day on the road yesterday, it was a bit of a treat to hang around the house and have a bit of a lazy day.

 

There was one outing. As I was mixing the dough for the cookies it dawned on Scott and I that while we grabbed eggs when grocery shopping we somehow managed to lose them in a cart re-arrangement and they didn't make their way home.

 

So off we went to the store to quickly get some eggs.

 

Crisis averted!

 

Recipe for those interested:

 

Ingredients:

- 1 and 1/2 cups butter, softened

- 2 cups of white sugar

- 4 eggs

- 1 teaspoon of vanilla extract

- 5 cups of all-purpose flour

- 2 teaspoons of baking powder

 

Directions:

01. In a large bowl, cream together butter and sugar until smooth.

02. Beat in eggs and vanilla.

03. Stir in the flour, baking powder, and salt.

04. Cover, and chill dough for at least one hour (or overnight).

05. Preheat oven to 400 degrees F (200 degrees C).

06. Roll out dough on floured surface 1/4 to 1/2 inch thick.

07. Cut into shapes with any cookie cutter. (I didn't do this; I just rolled and flattened the cookies)

08. Place cookies 1 inch apart on ungreased cookie sheets. (As always, I lined mine with parchment paper)

09. Bake 6 to 8 minutes in preheated oven.

10. Cool completely.
