Strawberry Lemon Basil Popsicles

Another hot weekend in the city kept me out of the kitchen and hanging around the freezer.
Now this recipe isn't entirely heatless, but the heat is minimal so I decided to risk it and give it a shot.
I would recommend using silicone popsicle makers if you're going to give this one a shot. The reason there's only two in the photo, instead of the 7 I made is because only two of these slid out of the mold nicely... It was kind of a pain actually. So save yourself a headache, and get a silicone version... or find a trick online for the plastic ones!
Recipe for those interested:
Ingredients
- 1 and 1/2 cups water, divided
- 1 cups sugar
- basil leaves
- 2 cups chopped fresh strawberries
- 4 lemons, juiced or 3 tablespoons of lemon juice
Directions:
01. Make a basil simple syrup by combining 1/2 cup of water, 1 cup of sugar and the basil leaves (the more you use, the stronger the basil taste, use at least 5-7) in a pot over medium heat.
02. Stir until sugar dissolves, then let simmer for about 10 minutes, stirring often.
03. Remove the basil leaves, and set the syrup aside to cool.
04. Puree strawberries in a food processor or blender.
05. Add lemon juice, basil simple syrup and the remaining water and blend.
06 Pour mixture into your popsicle mold and freeze for at least 4 hours.
