Sunday is supposed to be a pretty busy day for me, so I needed something quick for Sweet Sunday.

 

I also needed breakfast so I decided to combine the two and get a head start on the day!

 

I've never really mastered the art of crêpe making but this set turned out pretty good, maybe people are right when they say practice makes perfect.

 

Recipe for those interested:

 

Ingredients:

2 eggs

2/3 cup of milk (I used skim)

1/2 cup of flour

1 tablespoon of butter, melted

1/2 teaspoon of sugar

1/2 teaspoon of vanilla

 

Directions

1. Heat a non-stick frying pan over medium high

2. Whisk eggs in a medium bowl. Whisk in milk, flour, butter, sugar and vanilla until no lumps remain.

3. Pour 1/2 cup of batter into the centre of the hot pan, lift the pan from the burner and tilt from side to side to have a thin layer of the batter cover the surface. Return pan to burner and cook until top is set and edges begin to turn golden. Loosen with a spatula and flip. Cook for another 30 seconds or so. Remove from heat.

 

Repeat as necessary. This recipe made 4 crepes and I kept the ready ones warm by storing in the oven at a low temperature.
