I requested this French Laundry Cookbook dish as our main course for Valentine's Day:

 

Butter-Poached Maine Lobster

with Leeks, Pommes Maxim, and a Red Beet Essence

 

I remembered a butter-poached lobster tail being really good when we had one at The French Laundry a few years ago, and this was also pretty awesome. I liked the combination of the lobster with the leeks and the beet sauce. The potato crisp on top was a little oily and tough, but that could probably be fixed next time.

 

Steve wasn't as big a fan of this as I was, but I suppose that's only fair. I wasn't as big a fan of the fish dish that he made last year. This was the perfect serving size too. I still had room for dessert afterward.
