…or perhaps it is the left.
In Yorkshire there is a saying, “there’s no waste with a pig” referring to the fact that pigs will eat anything although it usually refers to a person rather than an animal.
In Spain they could say, “there’s no waste on a pig” referring to the fact that they use every part of the animal including the snout and it’s ears.
There are plenty of recipes that use the pig’s ear as an ingredient including: Oreja de cerdo al ajillo, Oreja de cerdo en salsa (very popular in bars apparently) and Pasta con oreja de cerdo to name but a few.
For starters you could try this one:- Oreja de cerdo socarra
Lo primero es soflamarla a una llama de alcohol para quitarla los pelos, luego se raspa y se corta en trozos, que se ponen a cocer en un cacharro a la lumbre con agua, unos gajos de cebolla, laurel, ½ cabeza de ajos, una ramita de hierbabuena y sal. Cuando esté tiernecita, se pasa a una fuente y se sirve, acompañada de una salsa, rebozadas en huevo batido y pan rallado o fritas, y espolvoreadas de ajo y perejil.
