Shrimp, Tomato, Pea and Basil Risotto

I made this "Shrimp, Tomato, Pea and Basil Risotto" from a recipe from my new favorite cookbook, The MediterrAsian Way. (There are also great recipes from these guys at their website, MediterrAsian.com.) It turned out really well!

 

The cool thing about this recipe is that it's much easier to make than the traditional risotto method and you can actually walk away from the pot for a while...you don't have to watch the pot constantly, stirring it laboriously, adding stock bit by bit as it gets absorbed bit by bit.
