noodles with veggies (recipe modified from cookingcute.com Soba Noodles with Tofu and Veggies) and tea marbled egg. i love the sauce on the noodles! something i will definitely do again, and keep in mind for a spring roll dipping sauce.

 

could not find the package of soba (100% buckwheat) noodles i know i have, so did a substitution with quinoa pasta. because the quinoa was so hard and gritty, i decided to go ahead and sauce the noodles ahead of time, and store them in the fridge that way. made a big difference -- the softened up to a perfect al dente, and really soaked in the flavor.
