twice cooked melting pork belly

TWICE COOKED MELTING PORK BELLY 1.Place the pork belly (200 gm), ginger paste 1 tbsp,garlic paste 1 tbsp,corrinder and mint fine paste 2tbsp, star anise, wine vinegar and fish sauce 1 tbsp ,black pepper into a kitchen pp bag and make it air locked and put into hot water and bring to a boil. Reduce to a simmer and simmer gently for 25to 30 minutes, turning the pork once or twice during the cooking process to ensure even cooking. Once tender remove from the heat.

2.Preheat the oven to 215°C or light up charcoal…..

3.Remove the belly from the stock, remove the skin and a little of the fat below the skin (opp). Place on a roasting tray, Mix together the bbq sauce* over the pork belly. Place in the preheated oven and cook for 15-20 minutes, turning often.

That remove skin put into the oven and make it crispy.

4.Remove the belly from the oven and place on a serving plate. Slice and serve garnished with bbq sauce and crispy skin.

5. * BBQ sauce….. Fry the onion and garlic in oil with the chilli, fennel seeds and sugar.

6.Add the soy sauce, fish sauce, ketchup,season with salt and pepper .now add the remaining portion of liqued form the pp bag.

7.Bring to the boil and simmer for a few minutes to combine the flavours. Use as a dip or to coat, chicken , pork….enjoy .
