How to make sure you can have a little summertime burst of pesto, even in the brutal heart of Winter

Freeze it! I freeze the pesto in ice cube trays, then pop them out and store them in plastic freezer bags until use. Then, you can just reach for however many cubes you need for whatever application. Such a treat in dark, frigid January.
