beets me!

Got a loverly little bunch of beets in the last winter CSA box. Scott ain't havin' it (thinks they taste like the basement), so I've been roasting small batches and making delicious salad. This was the first one--beets roasted and marinated in honey balsamic vinaigrette overnight, tossed with red leaf, toasted walnuts, and goat cheese. Mmmmm. The empty bowl afterward looked like bloody murder and freaked out a few co-workers.
