Rabbits at night.
I find that the best way to walk and photograph at night is to keep the camera with light attached at about shoulder hight, pan slowly left to right looking for eye shine or movement. Once I spot an animal I hold the camera/light steady and it's possible to walk up quite close at least in the case of rabbits.
